Tamago

egg custard

Tamago is a sweet egg custard like cake. It can be savory or sweet. It is created with intricate layer after layer of egg yolk which slowly cooks to form each new layer. In Japan, tamago is often the deciding factor whether a sushi patron will dine at the sushiya (sushi bar) or not. They will often come in, order the tamago, and judge the bar based on this piece alone.
